Athena's first trip around the sun was marked with an exuberant celebration that I had the sheer joy of attending, and let me tell you, it was a day etched in happiness and flavoured with the most exquisite Thai fusion dishes one could imagine.

As I stepped into M Dining, the restaurant that played host to this special occasion, I was immediately wrapped in an ambience that whispered of both elegance and festivity. The decor struck a beautiful balance between opulent and inviting, with a hint of contemporary Thai-inspired touches that paid homage to the culinary journey we were about to embark upon. Balloons in shades of pastel bobbed gently in a little corner together with all the other birthday gifts. The whole setting was as beautiful as it was befitting for our little Athena’s big day.

1. Soft Shell Crab Burger
Let's talk about the gastronomic odyssey, a feast for the senses that unfurled before us. The soft shell crab burger was a marvel, with its audaciously crispy crab encased within a pillowy bun that seemed to whisper promises of crunch and flavour. Each bite was a symphony of textures, the softness of the bread juxtaposed against the delightful crispiness of the crab creating a harmonious mouthful that left us all craving more.
The addition betel leaf with scallop is an intriguing one, offering a unique blend of flavours and textures that could complement the soft-shell crab burger beautifully. The delicate sweetness of the scallop really dovetailed with the fresh betel leaf, creating an appetizer that teases the palate and sets the stage for our subsequent gastronomic pit stops!
2. Deep-fried Snapper
Next to make its grand entrance was the deep-fried snapper. This dish was nothing short of a masterpiece; each fillet had been fried to golden perfection, the kind that sings to you of the sea and spice markets in a single bite. The fish itself flaked apart at the touch of a fork, revealing steamy, succulent flesh that was testament to its freshness and the chef's finesse. And the complimentary sauce was definitely conjured to perfection, making every bite of our golden-fried snapper a delight!
3. Thai Curry Chicken
The Thai Curry Chicken was a bold concoction, with layers of complex flavours building upon each other like a well-orchestrated symphony. The rich coconut base provided a creamy canvas for the dance of spices that (I believe) followed—lemongrass, galangal, kaffir lime leaves—all mingling to create a flavourful curry that was at once comforting and exotic.
4. Triplets of Mushrooms
As if the meal couldn't get any more indulgent, we were introduced to a dish that celebrated the earthiness of mushrooms. A trio of mushrooms came together in a dish that sang praises to these humble fungi. Each variety brought its unique texture and taste to the plate, creating an ensemble that was subtle yet undeniably profound in its flavour profile. I love this dish as I am a mycophagist!
4. Thai-Korean Fusion Basil Chicken Bibimbap
In the midst of our gastronomic journey at M Dining, another dish made a discreet yet unforgettable entrance: a bowl of perfectly cooked rice crowned with minced meat and basil leaves that released an aroma so enticing, it momentarily stole the spotlight from our lively conversations. The rice itself was a fluffy bed, each grain separate and tender, a testament to the chef's mastery over this staple ingredient. It was the kind of rice that could stand alone in its simplicity, yet it graciously played its part as the foundation for the rich topping it bore.
Atop this canvas of rice lay the minced meat—juicy and savoury, stir-fried to a delectable crispness. The choice of meat was impeccable, seasoned with a balance of soy and fish sauces that provided a salty depth complemented by a hint of sweetness. But the true hero of this dish was the basil leaves—Thai holy basil, to be precise. Their presence was far from ornamental; these leaves were the aromatic soul of the dish. The different flavours permeated the juicy meat and fluffy rice with a fragrance that was at once earthy and intoxicating.
5. Tom Yum Soup
Another dish stood out as a fiery masterpiece that demanded our attention: the Tom Yum Soup with succulent scallops and plump prawns. This iconic Thai creation was a tantalizing combination of vibrant ingredients and a thrillingly spicy aftertaste that left our taste buds dancing. As the bowl of Tom Yum Soup was placed before us, wisps of aromatic steam wafted up, carrying with them the unmistakable fragrance of lemongrass, kaffir lime leaves, and galangal (correct me if I am wrong).
The aftertaste was what truly set this Tom Yum Soup apart from the rest. As we savored each spoonful, a crescendo of spiciness gradually built up, leaving a delightful tingling sensation on our tongues. The heat lingered just long enough to keep us coming back for more, yet never overpowering the nuanced flavors of the soup itself.
6. Creme Brulee
And then, as our palates thought they had reached their peak, the creme brulee arrived. With a sugar crust shimmering like amber under the soft restaurant lighting, each tap of the spoon shattered it into a thousand delicious shards. Beneath the layer of golden shimmering crust was custard so smooth and rich it felt like silk upon the tongue. I really loved the lingering aftertaste of lemongrass and ginger as well which helped to amplify the indulgence I had enjoyed thus far.
7. Tub Tim Krob Reimagines
The grand finale of our delightful dinner was a modern reinterpretation of the classic Thai dessert "tub tim grob." I am not entirely sure of the mixture of ingredients but the chef had conjured a flawless dessert that centred around the delicious scoop of ice cream. As I savored each spoonful, the interplay of textures and flavors was a revelation. This modern twist on "tub tim grob" was as visually stunning as it was decadently delicious. It was the fitting finale for our birthday celebration to end on a sweet note.
In between these culinary delights were moments filled with pure family joy. Watching Athena clap her tiny hands in glee or bubble up with laughter at playful antics was an absolute delight. She was our little star, shining brightly, her eyes reflecting the wonder and excitement of her first-ever birthday party.

Seeing him there, partaking in his granddaughter's celebration, added an emotional depth to the festivities that tugged at our heartstrings. As we sang 'Happy Birthday', with Athena looking on in awe at her candle-lit Minnie Mouse cake. It felt as though time stood still for just a moment as we snapped photos that we will remember for a lifetime. This moment allowed us all to bask in the love and unity that family brings. After all, it is not easy for family members to come together during this Covid Age. All in all, this wasn't just any birthday party; it was a milestone for Athena and a precious memory for all of us lucky enough to be there.
